Do you have a peanut butter loving family? I do. My daughter and husband can put down a jar a peanut butter in a week between the two of them. They are always telling each to stay out of their peanut butter. When they start on each other I just roll my eyes and walk away.
You would think by the way they act it was the high-sugar peanut butter that they are fighting over. But, it’s not. It is the straight up peanuts, oil, and salt peanut butter. So it is not like I can blame their addiction on the sugar. It is just really good peanut butter.
I hope that they don’t mind that I had to use some of their peanut butter to make cookies for them. These cookies are not overly sweet, and the peanut butter is still the star. Now if I can only find a way to keep them out of the batter until all the cookies are made.
Peanut Butter Cookies
Mix sugars, peanut butter, shortening, butter and egg in large bowl. Stir in remaining ingredients. Cover and refrigerate about 2 hours or until firm.
Preheat oven to 375ºF.
Shape dough into 1 1/4-inch balls. Place about 3 inches apart on un-greased cookie sheet. Flatten in crisscross pattern with fork dipped into sugar.
Bake 9 to 10 minutes or until light golden brown. Cool 5 minutes; remove from cookie sheet. Cool on wire rack.
