Mascarpone French Toast

We have been told all our life that breakfast is the most important meal of the day, so why do we fuel our bodies with fast quick foods that never seem to be enough? I won’t lie, I have grabbed my fair share of quick, run out the door meals, especially when running late with the kids. 

I often make big batches of quick breakfast items like waffles, pancakes, bagels, english muffins and french toast sticks. It is a lot easier to grab these in the morning instead of waiting in line in a drive-thru, and it saves money.

Now that my kids are teenagers and can get themselves ready in the morning, I have a little more free time, though not much, to really enjoy breakfast again. When I make french toast these days, I love using country loaf bread. It soaks up the egg mixture without getting soggy. There is nothing worse than soggy french toast. I took my classic french toast stick recipe and gave it a little upgrade. 

I should have known the second my kids saw what I was having for breakfast they were going to swoop down and eat it up with my husband leading the way. That is exactly what happened. So to avoid this happening every time I want a little extra fun breakfast, I broke my recipe down to make a small serving. 

Drizzling a little honey or the walnut maple syrup over it really brings out the sweetness of the mascarpone cheese. You can’t go wrong either way or leaving it off completely. Grab yourself a cup of tea or coffee and enjoy your breakfast again. 

Mascarpone French Toast

In a small bowl whisk together egg, milk, and vanilla. Once everything is well combined, dip both sides of the bread to coat with the egg mixture. 

In a non-stick skillet over medium-high heat, place bread and pan fry until golden brown.

Once bread is golden brown, remove from heat. Let cool just a little, this makes spreading the mascarpone cheese easier. Top with assorted berries. We used strawberries, blackberries, raspberries, and blueberries. Drizzle honey or walnut maple syrup on top if you need to make it even more special.

Ingredients

  • 1 egg
  • 3 slices of country bread cut thick
  • 3 tbs vanilla
  • ¼ c milk
  • Fresh berries (blueberries, strawberries, raspberries, blackberries)
  • Mascarpone cheese
  • Honey or Walnut maple syrup (optional)
